It's spring! Spring is my second favorite season (no season can best summer) so I thought I'd post a simple recipe to celebrate. I've been eating this salad daily for the last week, it's just so easy and delicious! It's a basic recipe, so you can add or remove any ingredients and replace them with something else. For example the strawberries can easily be replaced with any other summer fruit; berries, pineapple or mango will also taste great!
Ingredients:
- lettuce (or spinach)
- 150 gram strawberries
- 1/6 cucumber, diced
- 18 gram goat cheese, crumbled
For the dressing:
- 1 teaspoon dried dill
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1/3 tablespoon agave syrup (or honey)
Preparation:
1. Combine lettuce, strawberries, cucumber and goat cheese on a plate. In a small bowl, whisk the oil, red wine vinegar, agave syrup and dried dill. Pour dressing over salad.
You can have this for lunch or as a side dish for dinner. It will taste great with grilled chicken. Enjoy and let me know what you think!
